• 2 eggs
• 1 cup garbanzo beans
• 1 cup spinach
• 1 tsp olive oil
• Salt and pepper to taste

1. Warm the garbanzo beans on the stove top or in the microwave with the spinach. Salt and pepper to taste.
2. Transfer to serving plate or bowl.
3. Fry or poach two eggs.
4. Place the eggs on top of the garbanzo beans. A runny yoke makes a delicious sauce for the beans.
